4 chicken breasts
4 tbsp. pesto ANNA MARTA
4 tbsp lime juice
1 tbsp. sambal oelek
SALAD
1 avocado, diced
1 cup cherry tomatoes, cut in half
1 tbsp lime juice
coarse salt and pepper to taste
Make a marinade by mixing together the pesto, lime juice and sambal in a bowl. Place the chicken breasts in the marinade and leave for 1 hour or longer, up to 24 hours. Grill the chicken.
Slice the avocado and tomato, add lime juice and season with salt and pepper. Taste and serve with the chicken.
